Improvement of Dairy Farms Management of Appenino Campano Area Producing Milk: “Nobilat”

The aims of the present study were: (i) to explore the microbial community of biofilms collected from 11 different Tinas of Hyblean area of Sicily and of milk samples both inoculated and incubated with biofilm; (ii) to identify the VOCs generated in the incubated milk samples; and (iii) to correlate the VOCs formation with the detection f LAB species.
Influence of Presalting and Brine Concentration on Salt Uptake by Ragusano Cheese

The objective of the study was to determine if presalting the curd before stretching and use of brine that was not fully saturated (i.e., 18% salt) would influence the amount and rate of salt uptake from brine.
Technology to Produce Ragusano Cheese: A Survey

Our objective was to conduct a survey of milk composition and the Ragusano cheese-making procedures used at various farms and to develop a consensus description of the traditional procedures as the foundation for further scientific research on this cheese variety.
