Regional Cacioteca for historic Sicilian cheeses
CoRFiLaC, in agreement with the Presidency and the Agriculture and Forestry Department of the Sicilian Region, has designed and created the “Regional Cacioteca” for Historic Sicilian Cheeses.
In a series of caves, also reconstructed with the use of natural rock from the territory of origin, the essential elements characterizing the historical seasoning systems are reproduced. The complex, in a basement position, is created through an architectural project of extraordinary importance and an amphitheater that allows the implementation of cultural moments.
The caves, in which the individual Sicilian Historical Cheeses are collected and refined, form a splendid setting for a centrally positioned classroom in which, thanks to the presence of a glass surface, it is possible to observe the dairy world.
The “casa abbitari”, the art workshop of the “massaro”, has been faithfully reconstructed, in which educational cheese-making can be carried out, using the ancient and traditional processing tools.
